Working directly with Ancora's culinary team, Smart Food Service was able to create a culinary vision that celebrates food theatre to enhance total guest experience. We developed an open kitchen environment whilst being considerate of labour efficiency, food safety and operational flows. Smart developed comprehensive bid documents and a drawing package for the ownership team to tender the food service package – Ancora is currently under construction – stay tuned for opening photos!
